How to make Fermented Daikon Radish – My Recipe

Check out this video where I share my recipe for fermented Daikon radish and explain how to make it.  It’s really yummy ‘real food‘ and so very good for you. It makes a great side to have with any meal that will help you to digest your food more easily.

Do you know that daikon radish contains enzymes that assist with digestion? Daikon will help you to digest carbohydrates, proteins and fats and in this recipe where it is combined with cumin seed, coriander seed and chilli it creates a food that will assist your digestive processes immensely!

That’s not the only benefit though. Because it’s fermented, it contains Lactobacillus bacteria – they’re good bacteria that will colonise your digestive system and help to keep you healthy. Gut flora is key to a good immune system.

Also, daikon radish as been shown by research in Japan, to stop our bodies from creating harmful chemicals that can lead to cancer. When combined and then fermented with other powerful spices like cumin seed, coriander seed, chilli and garlic that also fight cancer, you end up with a food that’s a real nutritional powerhouse and health tonic!

NOTE: I’d suggest that you use only 1 heaped teaspoon of salt for this amount of daikon as I think the batch I made in this video is a little salty. I really must start writing down my recipes consistently!

I’d not seen the daikon chopped that way for fermenting – don’t see why it wouldn’t be just fine, though. Thanks very much for the video (my only slight suggestion is that it should be about half as long). I’ll give this a go (with half the salt as you’ve recommended). Cheers.
